Ingredients:

  • 6 large eggs, separated
  • 1/4 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated erythritol or preferred keto-friendly sweetener
  • 1 tsp vanilla extract
  • 1/4 tsp cream of tartar
  • 1/2 cup heavy cream
  • 2 tbsp powdered erythritol or preferred keto-friendly sweetener
  • 1/2 tsp vanilla extract
  • 2 oz dark chocolate at least 85% cocoa, melted
  • Optional: additional dark chocolate shavings for garnish

Instructions:

Preheat the oven to 350F 175C

Line a baking sheet with parchment paper

In a large bowl, beat the egg yolks, almond flour, cocoa powder, granulated erythritol, and vanilla extract until smooth

In another bowl, beat the egg whites and cream of tartar until stiff peaks form

Gently fold the egg white mixture into the egg yolk mixture until fully combined

Spread the batter evenly onto the prepared baking sheet

Bake for 12-15 minutes or until the cake is set and springs back when lightly touched

While the cake is baking, prepare the filling by whipping the heavy cream, powdered erythritol, and vanilla extract until stiff peaks form

Once the cake is baked, remove it from the oven and let it cool for a few minutes

Carefully flip the cake onto a clean kitchen towel dusted with cocoa powder

Peel off the parchment paper and roll the cake tightly with the towel, starting from one short end

Let the cake cool completely while rolled up

Unroll the cake and spread the whipped cream filling evenly over the surface

Drizzle melted dark chocolate over the whipped cream filling

Roll the cake back up without the towel

Garnish with additional dark chocolate shavings if desired

Refrigerate for at least 30 minutes before serving

Ingredients:

  • 1 lbs 680g boneless pork shoulder
  • 1 cup barbecue sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 hamburger buns
  • Sliced pickles optional

Instructions:

Put the pork shoulder in a cooker that cooks slowly

Put ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper in a bowl

Mix every thing together

Add the sauce to the slow cooker and pour it over the pork

Put the lid on top and set the heat to low

Cook for 8 to 10 hours, or until the pork is soft and can be shred with a fork

After the pork is done cooking, shred it in the slow cooker and mix it with the sauce

In a toaster or on a grill, toast the hamburger buns until they are just barely browned

Put some of the saucy pulled pork on the bottom half of each bun

If you want, you can add sliced pickles on top

To make a sandwich, put the top half of the bun on top

Instructions:

Before you start cooking, heat the oven to 375F 190C

Put parchment paper on baking sheets

One at a time, add the eggs and beat well after each one

Vanilla extract and salted caramel sauce should be added and mixed in

Mix the flour, baking soda, and salt together in a different bowl

Slowly add the dry ingredients to the wet ones and mix them together until they are just combined

The semisweet chocolate chips should be carefully mixed in

Place rounded tablespoons of cookie dough about 2 inches apart on the baking sheets that have been prepared

Use the back of a spoon or a fork to gently press down on each ball of cookie dough

Add a few sea salt flakes to the top of each cookie

After the oven is hot, bake for 9 to 11 minutes, or until the edges are golden brown

After taking the cookies out of the oven, let them cool for a few minutes on the baking sheets before moving them to a wire rack to cool all the way down
