Ingredients:
- 4 chicken breasts
- 1 cup dried cranberries
- 4 cups mixed greens
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 cup chicken broth
- 2 tablespoons balsamic vinegar
Instructions:
Preheat oven to 375F 190C
Season chicken breasts with salt, pepper, and dried thyme
In a skillet over medium-high heat, heat olive oil
Sear chicken until browned on both sides, about 3-4 minutes per side
Remove chicken from skillet and set aside
In the same skillet, add minced garlic and dried cranberries
Cook for 2 minutes
Pour in chicken broth, balsamic vinegar, and lemon juice
Bring to a simmer, scraping up any browned bits from the bottom of the skillet
Return chicken to the skillet
Transfer skillet to the preheated oven and bake for 20-25 minutes or until chicken is cooked through
While chicken is baking, toss mixed greens with a drizzle of olive oil, lemon juice, salt, and pepper
Once chicken is done, serve it over the mixed greens
Garnish with additional cranberries if desired
